Baked Mini-Frittatas

This morning's breakfast idea came from this picture I remembered seeing on Pinterest a few weeks ago.  I didn't make that exact recipe this morning (I will sometime soon), but it was the thing that spurred me to think about how else I could bake eggs in the oven.  I am sure there is a recipe for this somewhere, but I was feeling too lazy to look anything up this morning, so this is what I came up with:



Scrambled up some eggs and added some scallions, chopped fresh spinach and a pinch of salt.  I decided to use the mini-muffin tins because my boys love anything mini.



Baked them at  400° for about 15 minutes, or until fork inserted comes back out clean. Obviously, I overfilled the muffin tin so they're a little too fluffy (lesson learned for next time).



They tasted good and went well with the rest of our breakfast, potatoes o'brien and breakfast sausage (the red on the frittata is ketchup, my youngest son loves ketchup on his eggs).

* I made extra so I could have some to toss in the freezer for mornings when I need something quick.
* Don't forget to spray the muffin tins with non-stick spray!
* Next time I'll add some crumbled bacon to the mix, sadly we ate the last of our bacon yesterday!

Cars On A Beach Highway - Breakfast

Today's breakfast:


Ocean: Blended bananas and applesauce (plus 2 drops blue food coloring)
Beach: Kix Breakfast Cereal
Road: Peanut Butter (food colored black) and yellow decorator icing
Cars: Clif Builders Bar, Cheerios, red decorator icing
Grass: Eggs (1 drop green food coloring), spinach and scallions


Both of the boys loved it.  Here's my oldest, Gabriel, hamming it up!  Rique was still feeling too sick to want his photograph taken.

Goldfish - Dinner

Everyone is still feeling sick here so we're trying to keep things simple.  Here's tonight's dinner:


Creamy tomato soup sprinkled with pizza seasoned goldfish crackers, an open-face grilled cheese fish sammie (american cheese with provolone details) and a couple vanilla cupcake flavored goldfish.  Oh, and the fish's eye and mouth are made with black cupcake sprinkles (2 black bats broken in half, 1/2 for the eye and 1 1/2 for the mouth).  

If anyone wonders why I use so much provolone, it's because my Mom works at Leprino Foods  and gives me free cheese all the time.  I love free stuff!

Duck In Her Nest - Lunch

The boys requested "duck lunch" today, we're all sick but I came up with something quick and easy.



Ham and provolone duck sammie with mustard coloring and a half raisin eye.  Ramen noodle "nest", eggs (chicken, not duck!) and scallion "reeds".  They were happy with it and I'm glad these sicko kids are eating anything.

Puppy Theme Lunch

Today's lunch had a puppy theme. PB&J puppy sammie on a bed of spinach "grass", 2 ham and provolone cheese "squeaky balls", 3 graham cracker scooby snack bones, a carrot "dog house", tapioca pudding (dyed blue) " puppy water" and diced apple, mango and passion fruit "puppy chow".

Ocean Theme Dinner

Dinner I made for the boys tonight... hotdog octopuses, gold fish, mini blue shells (pasta) and purple "coral" (small salad macaroni) in butter sauce with scallion and spinach "seaweed" on a bed of parmesan "sand". Ocean water (blue powerade) to drink and shark fruit snacks for dessert.   They loved it!

Scripture/Quote Stars (Food For Thought)

I made these as a birthday gift for a friend of mine.  They are little 3D origami stars.  I wrote a scripture or a quote on each one before I folded it.  For this gift I made 60 stars (about 30 church quotes and 30 scriptures), I figured that way he had one for each week of the year (52) plus 8 extra for the weeks when he needed an extra spiritual lift!






This was a last minute project so I just scrounged around for what I already had at the house.  The container is a rinsed out container that had almonds in it!

I used scrapbook paper and construction paper and cut it myself instead of buying the paper and I made mine smaller in size than the ones on the blog (closer in size to the ones on the video).  
If you're making a lot it can start to bruise your fingers.  Instead of using your fingers to do the last part (pinching the corners to make the star), I found it was easier to press them against a sharp hard 90 degree corner (I used the corner of my kitchen cabinet).

Pretzel Hugs

Decided to try this little snack that I found on Pinterest!  (Have I mentioned how much I love Pinterest!?)  They tasted great and were super easy to make... I'm not joking, my 2 year old helped me make them!




















We did random colors for the ones we were going to eat at our house (I had a bag of regular plain M&Ms and also a bag of Easter colored plain M&Ms).  Then for the ones we were doing as gifts, we chose the person's favorite 2 colors.


Soon as you pull them out of the oven and put the M&Ms on, you can throw them in the fridge and they're set in about 5-10 minutes.


I waited about 30 minutes before I packaged them for gifts, that way they didn't melt together and I kept the containers in the fridge until I was ready to give them out.
